Yummy Afternoon Snack ~ Lemon Bar



This is one of the popular item on the food serving table during my 5yrs old lover's birthday party.  Some guests had commented that it tasted good and were interested on the recipe.

It is a pretty common snack and one can easily find a Lemon Bar recipe, but when come to its taste, i think everyone might have their own preferences.  For me, i prefer less sour with thin filling and more crust, just a bit of lemony to go with.  It took me 3 trial to reach to the taste that i like and thanks to my 3 supportive lovers who have given their full support by finishing all of the lemon bar that i made! 

Ingredients:

For the crust base:
  • 113g soften unsalted butter
  • 30ml powdered/icing sugar
  • 130ml all purpose flour
  • a pitch of salt
For the filling:
  • 100g white sugar
  • 1 egg
  • 30ml fresh lemon juice ('bout half of a lemon)
  • 1 TBSP all purpose flour

Steps:
  1. Spray an 8' square pan with a non-stick vegetable spray and set aside
  2. Preheat oven to 350F/180C
  3. Beat the butter & sugar until creamy and smooth with an electrical mixer
  4. Add the flour & salt, then beat till all just started to combine together
  5. Transfer the mixture to the prepared pan and press onto the bottom of the pan untill all sides are covered
  6. Bake for bout 18mins or just unitl the edges started to turn lighly brown
  7. Remove from oven and place on a wire rack to cool
Start to make the lemon filling while waiting for the crust to cool:
  1. Beat the sugar and egg until smooth with a wire wrisk
  2. Add the lemon juice and stir to combine with a spatula
  3. Then, mix in the flour
  4. Pour the filling over on top of the crust and bake for 17-20mins, until the filling is set
  5. Remove from oven and place on a wire rack to cool
  6. Spray some icing sugar on top for deco
Serve hot & it's yummy!
